- 1 pc whole wheat baguette (100 g)
- 100 g light cottage cheese
- 1 tbsp fresh chives (finely chopped)
- 1 pinch chili powder (optional)
- 50 g smoked salmon (sliced)
- 0.5 pc red onion (sliced into rings)
- 1 handful arugula
- 1 pinch salt
- 1 pinch ground black pepper
Cut the whole wheat baguette in half, then slice it lengthwise. In a small bowl, mix the cottage cheese and lightly mash the curds with a fork.
Add the finely chopped chives, salt, pepper, and chili powder, then mix thoroughly. Spread the resulting cream on the bottom half of the baguette. Layer the smoked salmon slices, red onion rings, and fresh arugula, then close with the other half of the baguette.
Chef's tip
If you want an even creamier consistency, you can purée the cottage cheese with an immersion blender before adding the spices.
