Rice Preparation
Rinse the sushi rice thoroughly several times with cold water until the water runs clear. Then add fresh water, bring to a boil, and cook for about 10 minutes over low heat.
Remove from heat and let stand covered. Meanwhile, prepare the dressing: mix the rice vinegar, sugar, and a pinch of salt. Gently fold this mixture into the rice, then let it cool completely.
Assembling the Sandwich
Place a nori seaweed sheet on a piece of cling film with the shiny side down. Place a portion of rice in the center of the sheet, then layer the other ingredients on top: sliced cucumber, marinated tofu, and steamed red cabbage.
Chef's tip
It is advisable to cut the tofu into thin slices for better texture.
If you want a vegan version, use plant-based mayonnaise.
