Kifli Kukták

Omlós, vékonyra klopfolt marhaszeletek pirított füstölt szalonnás, hagymás natúr gesztenyével megtöltve, selymes vörösboros pecsenyelével tálalva. Igazi őszi, magyaros ünnepi fogás a vasárnapi asztalra.

Preparation method

Preparing the meat and chestnut filling

1

Cut the beef into 4 equal, large slices, then gently pound them thin under cling film. Season both sides with salt and freshly ground black pepper.

2

In a frying pan, render the finely chopped bacon in 10 g of lard. Add half of the finely chopped onion and half of the minced garlic, then sauté until translucent. Stir in the roughly chopped or fork-mashed plain chestnuts and a pinch of dried thyme, toss everything together for 2–3 minutes, then let cool to lukewarm.

3

Evenly distribute the chestnut-bacon filling over the laid-out beef slices, roll them up tightly, and secure with kitchen twine or skewers.

Chef's tip

For the filling, you can use store-bought cooked/roasted whole chestnuts, roughly chopped, or plain, unsweetened frozen chestnut purée. Make sure not to choose sweetened dessert purée!

It is best to cut the beef slices across the grain and let them sit at room temperature for half an hour before cooking; this ensures the result remains much more tender and juicy.
