Preparation and precooking the vegetables

Peel the kohlrabi and slice into pieces approx. 4-5 mm thick. Cook in boiling, lightly salted water for 6-8 minutes until crisp-tender, then drain and let drip dry thoroughly.

Cook the rice in double the amount of lightly salted water until half-cooked (approx. 10 minutes), then leave covered to absorb any excess moisture.

Preparing the juicy mushroom filling

Finely chop the onion and crush the garlic. Clean the brown button mushrooms and cut them into thin slices.

Chef's tip

Resting for neat slices: Do not cut into the casserole immediately after baking; resting for 10-15 minutes is enough for the juices to settle and the layers to set perfectly.

Parboiling the kohlrabi: Make sure not to boil the kohlrabi until too soft, as it will continue to soften in the oven with the mushroom juices and sour cream.
