Preparation method
Preparation and vegetable base
Finely dice the onion and crush the garlic. Slice the cleaned carrots and celeriac into small cubes or thin rounds.
Melt the pork lard in a deep pot over medium heat. Add the chopped onion with a pinch of salt and sauté for 4-5 minutes until translucent.
Add the diced carrots and celeriac, then sauté for another 3-4 minutes to bring out the natural sweetness and aroma of the vegetables. Finally, stir in the crushed garlic and sauté for half a minute until fragrant.
Chef's tip
Any type of leftover cooked rice is perfect for this: white, brown, basmati, or even jasmine rice. If you don't have leftover rice, you can also cook 80 g of uncooked rice directly when adding the stock.
You can further enrich it with leftover vegetables from the fridge: kohlrabi, green peas, or a few slices of fried sausage also pair wonderfully with the Hungarian-style tomato base.
