Finely dice the onion and crush the garlic. Wash the wax peppers and tomatoes, then cut them into bite-sized cubes. Thinly slice the dry sausage.
Fluff the leftover cold cooked rice with a fork so the grains separate nicely.
Sautéing and cooking
Melt the lard in a large skillet or wok, and fry the sausage slices until they render their flavorful fat.
Chef's tip
If you don't have leftover cooked rice, this dish also works perfectly with freshly cooked, fully cooled, and slightly drier rice.
For a vegetarian version, simply omit the sausage and use sunflower oil instead of lard.
