INGREDIENTS

  • 8 slices of toast bread
  • 6 hard-boiled eggs
  • 2 ripe avocados
  • 80 g celery stalk
  • 30 g Dijon mustard
  • 15 ml lemon juice
  • 30 g mayonnaise
  • 1 tablespoon finely chopped chives
  • 2 large tomatoes
  • 1 teaspoon freshly ground pepper
  • 1 teaspoon salt

PREPARATION

    Slice the celery thinly. Cut the avocado in half, remove the pit, then carefully scoop out the flesh with a spoon, and cut into approximately half-centimeter cubes.

    Cut the hard-boiled eggs in half, carefully scoop the yolks into a bowl, and mix with a fork with the mustard and lemon juice. Add mayonnaise and mix again.

    Dice the egg whites, then gently fold them into the egg yolks.

    Add the chopped celery, avocado, finely chopped chives, salt, and pepper, then mix.

    Slice the tomato into approximately 1 cm thick slices. Toast 1 slice of bread, place a slice of tomato and a portion of the egg salad on top.
Tip
Instead of slicing the avocado, you can also mash it roughly with a fork, which will give the salad a different texture. Or slice a part of it and mash the rest with a fork. You can also add a few drops of Tabasco to the egg salad.
