Preparation and White BBQ Sauce
Prepare the legendary Alabama white BBQ sauce: in a bowl, whisk together the mayonnaise, apple cider vinegar, Dijon mustard, grated horseradish, and brown sugar until smooth. Season with half of the garlic granules, as well as salt and freshly ground black pepper. Set aside one third of the sauce for serving, and use the rest for grilling.
Pat the chicken thigh fillets dry with paper towels, then season evenly with salt, black pepper, smoked paprika, and the remaining garlic granules.
Grilling and Serving
Preheat the grill to medium, indirect heat (approx. 180-200 °C). Place the seasoned chicken thighs on the grate and grill with the lid closed for about 8-10 minutes per side, until they develop a nice golden-brown crust.
Chef's tip
The acidity of the white BBQ sauce wonderfully balances the rich flavor of the juicy chicken thighs. If you prefer a spicier kick, you can also add a pinch of cayenne pepper to the sauce.
It can be prepared wonderfully on both gas and charcoal grills; adding a few applewood smoking chunks to charcoal embers imparts an even deeper, authentic Southern aroma to the meat.
