A krumpligánica a magyar falusi konyha egyik legfinomabb, mégis méltatlanul elfeledett kincse. A puhára főzött burgonyát a saját főzőlevében finomliszttel sűrűre keverjük, majd sertészsírral kikent tepsibe szaggatjuk. Aranybarnára pirított édeskés hagymával és friss tejföllel sütőben készre sütve kívül ellenállhatatlanul ropogós, belül selymesen krémes marad. Igazi lélekmelengető, kiadós őszi egytálétel az egész családnak.

Peel the potatoes, cut them into even cubes, and place them in a large pot. Pour over just enough water to cover them, add the salt, and bring to a boil. Cook until tender, about 15–20 minutes.

When the potatoes are tender, do not drain the cooking water. Thoroughly mash the potatoes directly in the water inside the pot using a potato masher until you get a thick, puréed base.

Return the pot to low heat and gradually sprinkle in the all-purpose flour and ground black pepper. Stir vigorously with a wooden spoon for 3–4 minutes until the mixture thickens, cooks through, and pulls away from the sides of the pot. Remove from heat.

Chef's tip

If you want an even heartier dish, you can also fry a little diced smoked sausage or bacon along with the onions.

The secret to gánica is not draining the cooking water: in the hot potato liquid, the flour cooks quickly and the dough comes together perfectly.
