Wash the potatoes thoroughly and boil them in their skins in lightly salted water until almost tender (approx. 20 minutes). Drain, allow to cool until lukewarm, then peel and slice into rounds about half a centimeter thick.
Blanch the green beans in boiling, lightly salted water for 4-5 minutes so they remain tender, then drain and let dry thoroughly.
Finely dice the smoked bacon, slice the sausage into rounds, and finely dice the onion. Whisk the sour cream until smooth with the crushed garlic, sweet paprika, half of the finely chopped fresh dill, salt, and freshly ground pepper.
Chef's tip
If preparing out of season, this works wonderfully with frozen cut green beans: there is no need to thaw them, just parboil in hot water for 2-3 minutes.
The smoked sausage and bacon have an intense salty flavor of their own, so go easy on salting the potato layers.
