A hagyományos debreceni sertéstokány a magyar konyha egyik legzamatosabb egytálétele. A finomra vágott sertéslapockát kolozsvári szalonnával, ropogós debreceni páros kolbásszal és édes paprikával pároljuk sűrű, fényes szafttá. Tökéletes, tartalmas családi fogás, amit friss petrezselyemmel és savanyúsággal vagy házi galuskával tálalunk.

Cut the pork shoulder into thin, bite-sized strips (tokány style). Slice the Kolozsvári bacon into thin strips and the Debreceni sausage into half-wheels. Finely chop the onions and crush the garlic. Slice the TV peppers into strips, peel the tomatoes, and dice them finely.
Sautéing and simmering
Melt the lard in a deep, heavy-bottomed pot and render the striped bacon over low heat until translucent.
Add the finely chopped onion and sauté over medium heat until golden brown. Stir in the crushed garlic, then after half a minute, remove the pot from the heat and sprinkle with sweet paprika.
Chef's tip
When making tokány, the meat and bacon are traditionally cut into strips rather than cubes, so that the gravy evenly coats the meat fibers.
If you enjoy spicy flavors, you can substitute one-third of the TV pepper with a mildly hot chili pepper.
