Preparing and seasoning the kebab
Finely grate the onion and 2 cloves of garlic, then squeeze out the excess onion juice thoroughly by hand or using paper towels so the meat mixture does not become too soft.
Place the minced lamb in a deep bowl. Add the squeezed onion, crushed garlic, dried oregano, 1 teaspoon of salt, and 1 teaspoon of freshly ground black pepper. Thoroughly knead the mixture by hand for at least 3-4 minutes until smooth and easily pliable. Place in the refrigerator to rest for 20 minutes.
Shape the rested mixture into elongated cylinders with wet hands, then press them onto flat skewers. Lightly brush the surface of the kebabs with extra virgin olive oil.
Chef's tip
If using wooden skewers, soak them in water for at least 30 minutes before grilling so they do not burn on the grill.
The secret to perfectly juicy kebab is thoroughly squeezing out the onion juice and kneading the mixture persistently, allowing the meat's fats and proteins to bind the shape together without adding eggs or breadcrumbs.
