Preparation method
In a pan, over medium heat, toast the pumpkin seeds until golden brown, stirring constantly. Then transfer them to a bowl and let them cool.
Preheat the oven to 180 °C.
Peel the pumpkin, cut it into approximately 2 cm cubes, and place them in a bowl. Drizzle with 2 tablespoons of olive oil, add 3 pinches of salt, 2 pinches of freshly ground pepper, and mix thoroughly. Spread the seasoned pumpkin in a single layer on a baking tray and bake in the preheated oven for 30 minutes. Transfer the roasted pumpkin to a bowl and let it cool.
Chef's tip
You will need an immersion blender for the preparation.
