Preparation method
Preheat the oven to 200 °C and prepare a small baking dish. You will also need a grater and a blender.
Peel the carrots and garlic, and cut the carrots into smaller pieces. Place them in the baking dish, drizzle with 1 tablespoon of sunflower oil, season with salt, and mix thoroughly. Bake for 20 minutes at 190-200 °C. Then pour in 50 ml of water and bake for another 15-20 minutes until the carrots are completely soft.
Transfer the roasted vegetables, along with any juices remaining in the baking dish, to a blender. Add the lemon juice, olive oil, and cottage cheese, then blend until silky smooth. Taste and add a little more salt if needed.
Chef's tip
It's advisable to cut the carrots into uniform pieces so they cook evenly.
If you want an even creamier consistency, you can use cream cheese.
