- 480 g ripe avocado
- 50 g red onion
- 14 g garlic
- 50 g lemon juice
- 10 g fresh basil
- 10 g fresh parsley
- 50 g mayonnaise
- 2 g salt
- 1 g ground black pepper
Cut the avocados in half, remove the pits, and scoop out the flesh into a high-sided bowl. Add the mayonnaise, then blend with an immersion blender until completely smooth and creamy.
Peel and finely dice the red onion, then add it to the avocado mixture. Peel the garlic and press it through a garlic press into the bowl. Add the lemon juice and finely chopped fresh herbs (basil and parsley).
Mix everything thoroughly, season with salt and freshly ground black pepper to taste. Serve with fresh toast or vegetable sticks.
Chef's tip
If you like it spicy, add a little chopped chili or cayenne pepper!
