Preparation method
Preheat the oven to 250 °C. Line a baking tray with baking paper.
Clean the peppers, remove the seeds, and cut them into quarters. Place them on the baking tray skin-side up, drizzle with a little olive oil, and bake at 245–250 °C for 15–20 minutes, until their skins start to brown/blacken. After removing them, place them in a sealable container and let them rest for at least 30 minutes – this will make their skins easy to peel off.
Meanwhile, peel the garlic.
Chef's tip
Serve on fresh bread or toast, garnished with fresh basil, finely chopped chili, or spring onion.
