Gazdag, szaftos magyaros egytálétel sertéslapockából, ropogósra pirított kolozsvári szalonnával, csíkokra vágott őszi gyökérzöldségekkel, száraz fehérborral és mustáros-tejfölös mártással simára összeforralva.

Thoroughly rinse the pork shoulder, pat dry, and cut into thin, even strips (tokány cut). Cut the Kolozsvár bacon into thin strips as well.

Finely chop the onion and crush the garlic cloves. Peel the carrots, parsley roots, and celeriac, then cut into thin, matchstick-sized strips (julienne). Finely chop the fresh parsley.

Cooking and simmering

In a heavy-bottomed pot, melt the lard, add the Kolozsvár bacon, and fry over medium heat until golden brown. Remove the crispy bacon cracklings with a slotted spoon and set aside.

Chef's tip

The secret to making tokány is cutting the pork into lengthwise, finger-thick strips parallel to the meat fibers rather than into cubes—this keeps it exceptionally juicy and tender while simmering.

Do not overcook the root vegetables; in a traditional Bratislava stew, they are at their best when they retain a pleasant, slightly crisp texture.
