A híres thai „részeges tészta” (Pad Kee Mao) pirított széles rizstésztával, zamatos garnélarákkal, roppanós kaliforniai paprikával és bőséges friss bazsalikommal. Tüzes wok-illat, tökéletes édes-sós-csípős egyensúly mindössze 20 perc alatt.

Preparation method

Preparation

1

Soak the rice noodles in lukewarm or warm water for the time indicated on the packaging (approx. 8–10 minutes) until pliable but still firm (al dente). Drain thoroughly and set aside.

2

In a small bowl, whisk together the oyster sauce, light and dark soy sauce, fish sauce, and cane sugar with one tablespoon of water until the sugar completely dissolves.

3

Crush the garlic and chili peppers in a mortar or mince them very finely. Cut the red bell pepper into thin strips, the spring onions into 3-4 cm pieces, and peel and devein the prawns, patting them dry with paper towels.

Chef's tip

The secret to perfect drunken noodles is a smoking-hot wok: stir-fry the ingredients quickly over high heat so the noodles do not become soggy, but caramelize instead.

Stir in the basil only at the very end after taking the wok off the heat, so the aromatic essential oils do not evaporate and it keeps its fresh flavor.
