Cut the stale bread into small cubes, roughly 1-2 cm in size. Heat the olive oil in a pan, add the bread cubes, and toast over medium heat, tossing frequently, until golden brown and crispy.
In the last minute of toasting, grate or crush the garlic over it so it becomes fragrant without burning. Remove from the heat and let it cool for a few minutes until lukewarm.
Place three-quarters of the toasted bread cubes into a food processor (set aside the remaining quarter for garnish when serving). Add the softened butter, sour cream, lemon juice, a pinch of salt, and freshly ground black pepper.
Chef's tip
It can be made wonderfully from any stale bread or pastry (sourdough, white or brown bread, even leftover bread roll ends).
Covered in the refrigerator, it will keep for 2-3 days, and the flavors will meld nicely in the cold.
