Cut the turkey breast into thin, bite-sized strips. Peel the daikon radish and carrot, then slice into thin half-moons or matchsticks. Clean the shiitake mushrooms and cut them into thin slices. Peel the fresh ginger and cut into fine matchsticks, and crush the garlic. Thinly slice the spring onions.
Cooking
Heat the sesame oil in a deep pot over medium heat. Add the matchstick-cut fresh ginger and crushed garlic, then sauté for 1 minute until fragrant.
Add the turkey breast strips to the pot and sauté for about 3-4 minutes until they turn white. Then add the sliced shiitake mushrooms, carrot, and daikon radish, and sauté while stirring for another 2 minutes.
Chef's tip
During cooking, the daikon radish absorbs the flavorful ginger broth, becoming pleasantly sweet and silky in texture.
If you want an even heartier one-pot meal, you can also cook a portion of Japanese udon or soba noodles in it.
