Kifli Kukták

Autentikus közép-vietnámi tésztaétel Quang Nam tartományból. Selymes rizstészta aranyló kurkumás alaplével, fokhagymás-salottás sült garnélával, bőséges friss fűszernövényekkel, ropogós földimogyoróval és lime-mal tálalva.

Preparation method

Preparation and Marinating

1

Clean the shrimp, devein them, then rinse and pat dry. Mix with 1 tablespoon of fish sauce, 1 clove of crushed garlic, and half of the turmeric, then let stand for 10-15 minutes.

2

Finely chop the shallots and the remaining garlic. Wash the fresh coriander and mint, then chop them roughly. Slice the spring onions into rings, cut the lime into wedges, and slice the chili pepper.

Cooking and Making the Broth

1

Heat 2 tablespoons of sunflower oil in a wok or deep skillet. Add the finely chopped shallots and garlic, then sauté over medium heat until translucent and fragrant.

Chef's tip

The signature feature of Mì Quảng is that it does not swim in soup: only a small amount of intense, aromatic broth is ladled under the noodles. Serving it accompanied by crispy sesame rice crackers (bánh tráng) makes it even more authentic!
