Dice the Kolozsvári bacon into small cubes and slice the smoked sausage into rounds. Slice the onions into thin half-rings and finely mince the garlic.
Drain the canned white beans and red kidney beans, rinse them thoroughly with cold water, then let them drain.
Cooking and simmering
Melt the lard in a large, deep skillet and fry the Kolozsvári bacon until crispy. Add the sausage slices and cook for 2-3 minutes until they nicely release their flavorful smoked fat.
Chef's tip
You can make the sauce of the beans even silkier and thicker by mashing a few beans against the side of the skillet with a fork towards the end of cooking.
If you like spicy food, fry a sliced hot green pepper in the fat along with the onions.
