Peel the potatoes, then cut them into roughly 2 cm cubes. Clean and finely chop the onion, garlic, and ginger. Drain the canned chickpeas and rinse them with cold water.

Rinse the basmati rice several times in cold water until the water runs clear, then set aside to drain.

Cooking

Heat the vegetable oil in a deep frying pan or pot over medium heat. Add the finely chopped onion and sauté for 4-5 minutes until translucent and lightly golden.

Chef's tip

If you prefer an even silkier sauce, mash 2-3 tablespoons of chickpeas and potatoes in the sauce with a fork at the end of cooking, which will naturally thicken the curry.

Leftover curry will keep fresh in the refrigerator for 3-4 days, and the flavors of the Indian spices will meld together even more harmoniously and intensely by the next day.
