Marinating and preparation
Pat the lamb dry with paper towels and cut into finger-thick slices or chops, if necessary.
In a bowl, mix together the extra virgin olive oil, freshly squeezed lemon juice, crushed garlic, dried oregano, chopped fresh rosemary, thyme, sea salt, and freshly ground black pepper.
Toss the lamb in the spiced marinade until thoroughly coated, then cover and leave to marinate at room temperature for at least 20-30 minutes (or in the refrigerator for 2-4 hours).
Chef's tip
The secret to a perfectly juicy result is quick searing over high heat and resting the meat for 5 minutes before slicing.
Served with a Greek village salad (horiatiki), warm pita, and fresh tzatziki, it makes a true Mediterranean feast.
