Cut the cod fillet into 3-4 cm bite-sized cubes. In a bowl, mix the finely grated ginger, crushed garlic, ground turmeric, and 1 tablespoon of fish sauce, then toss the fish cubes in it and let marinate for 15 minutes.

Cook the rice noodles in boiling water according to the package instructions for 3-4 minutes (or soak in hot water), then drain, rinse with cold water, and drain thoroughly.

For the dressing, mix the remaining fish sauce, freshly squeezed lime juice, cane sugar, 2-3 tablespoons of warm water, and thinly sliced red chili pepper in a small bowl until the sugar has completely dissolved.

Chef's tip

Traditionally, at Vietnamese tables, this dish is cooked with dill and spring onion right at the table using a small portable burner so that the aromas instantly fill the room.

If you prefer an even crunchier texture, toast the peanuts in a dry pan for 1 minute before serving.
