A Manduguk a koreai gasztronómia egyik legkedveltebb, lélekmelengető fogása. Ebben a vegetáriánus változatban a vékony tésztatasakok selymes natúr tofuval, ropogós kínai kellel, fokhagymával, gyömbérrel és újhagymával kevert gazdag tölteléket rejtenek. A batyukat forró, szezámolajjal és szójaszósszal ízesített tiszta zöldségalaplében főzzük puhára, így egy tápláló, könnyed, mégis mély ízű ázsiai leves készül el alig fél óra alatt.
Preparation method
Thoroughly press the tofu using a clean tea towel or paper towels, then crumble it finely with a fork or your hands into a large mixing bowl.
Cut the Napa cabbage into very fine strips, then finely chop them. Finely slice the white and light green parts of the spring onions (set aside the dark green tops for serving). Mince the garlic, peel the ginger, and grate it finely.
Add two-thirds of the minced garlic and grated ginger, the chopped Napa cabbage, spring onions, 1 tablespoon of soy sauce, 1 teaspoon of sesame oil, and a pinch of ground black pepper to the crumbled tofu. Mix the filling thoroughly until it binds together slightly.
Chef's tip
You can also prepare the mandu dumplings in advance and freeze them on a tray; frozen dumplings can be dropped directly into the hot broth, requiring only about 2 extra minutes of cooking time.
For an even richer soup, you can drizzle a lightly beaten egg into the hot broth during the last minute of cooking while gently stirring, according to Korean tradition.
