Preparation method
Preheat the oven to 200 degrees Celsius (fan-assisted mode). Wash and clean the chicken breast, then cut it into smaller slices or bite-sized pieces. Season with salt and pepper to taste. Chop the fresh herbs (thyme, parsley, chives) and divide them into two parts. Squeeze the juice from the orange.
Mix one half of the herbs with the cottage cheese and 8 tablespoons of freshly squeezed orange juice. Season with salt and pepper, and mix until you get a creamy dip. Place in the refrigerator to chill.
In a larger bowl, mix the remaining orange juice with the other half of the herbs, then toss the meat slices in it so that the marinade covers them completely. If desired, you can let it marinate in the refrigerator for an hour, but you can also proceed immediately.
Chef's tip
For an even crispier result, you can mix a little crushed gluten-free cornflakes into the gluten-free breadcrumbs.
