Preparation method

Preparation and boiling the potatoes

0

Peel the potatoes, cut them into even cubes, and cook in salted water until tender, about 20 minutes. Meanwhile, thoroughly rinse the yellow split peas under cold water.

1

Finely dice the Kolozsvári bacon, slice the cooked-smoked sausage into rounds, finely chop the onion, mince the garlic, and slice or dice the carrots.

Making the yellow split pea and sausage ragout

2

Melt the lard in a deep frying pan or pot, add the diced bacon, and fry until golden and crisp. Toss in the finely chopped onion and sauté until translucent.

Chef's tip

If you want to prepare it even faster, you can soak the yellow split peas in lukewarm water for 1–2 hours before cooking, which cuts the cooking time almost in half.

Great for using up leftovers: instead of fresh mashed potatoes, you can even use leftover mashed or boiled potatoes from the previous day for the topping!
