Thoroughly wash the leeks to remove any dirt trapped between the layers, then slice the white and light green parts into approx. 1 cm rounds. Peel the potatoes and carrots, then cut them into even, approx. 1.5 cm cubes.
Finely chop the fresh parsley, and prepare the fresh thyme sprigs and bay leaves for seasoning.
Cooking
Melt the butter in a large pot over medium heat. Add the sliced leeks and diced carrots, then cover and sweat over low heat for 8-10 minutes until the leeks soften and sweeten, making sure they do not brown.
Chef's tip
Potage Bonne Femme is a true rustic French classic: unlike smooth, blended cream soups, the vegetables in this soup remain chunky, while the rich butter and cream harmonize all the flavours.
If you want to make the soup even heartier, you can fry a little diced bacon or smoked ham in the butter together with the leeks right at the start.
