Preparation method
Rinse the red lentils thoroughly, then cook until soft in lightly salted water for about 10 minutes. Once cooked, drain and let cool.
Place the lentils in a bowl, add the sunflower seeds (reserve a small amount for garnish), flaxseed oil, lemon juice, crushed garlic, and grated ginger. Season with curry powder, smoked paprika, and freshly ground pepper.
Using an immersion blender, process everything until creamy. Finally, stir in the finely chopped red onion.
