Cut the roasted chicken (skin and bones removed) into very small cubes, or shred it with a fork. If you prefer a creamier texture, you can briefly pulse it in a food processor.
Wash the celery stalks, remove the tougher fibers, then cut them into small pieces. Finely chop the fresh chives.
In a bowl, mix together the mayonnaise, sour cream, mustard, and lemon juice. Season the dressing with salt and pepper to taste.

The cream is even more delicious if it sits in the refrigerator overnight, allowing the flavors to fully meld.
