Kifli Kukták

A Khao Pad Pla a tradicionális thai konyha egyik legkedveltebb serpenyős remeke: omlósra pirított tőkehalfilé, lágy tojás, illatos fokhagyma és zöldfűszerek találkozása a tökéletesen pergős jázminrizzsel. Gyors, tápláló és lenyűgözően aromás főétel, melyet roppanós uborkával és friss lime-mal koronázunk.

Preparation

1

If using fresh jasmine rice, cook it in lightly salted water, then spread it out on a tray so that it cools completely and excess steam evaporates – the most delicious fluffy fried rice is made from cold, day-old rice.

2

Pat the cod fillet dry with paper towels, then cut it into bite-sized cubes of about 2-3 cm. Finely mince the garlic, slice the spring onion (separating the white and green parts), and thinly slice the chilli.

3

In a small bowl, mix together the fish sauce, soy sauce, and cane sugar until the sugar is completely dissolved.

Chef's tip

The secret to an authentic, fluffy texture is chilled, drier rice: freshly cooked, steaming rice can easily become mushy and stick together in the wok.

Sear the cod separately and only stir it back in at the end: this way, the outside of the fish stays nicely golden brown while the inside remains tender and juicy without flaking apart during tossing.
