Preparation method

Preparation

1

Drain the tofu, thoroughly press out excess moisture with paper towels, then cut into even 2 cm cubes.

2

Toss the tofu cubes in 15 g of cornstarch until every side is coated in a fine white layer – this ensures a perfectly crispy texture when frying.

3

Prepare the spicy gochujang glaze: in a small bowl, whisk together the gochujang paste, soy sauce, brown sugar, finely grated garlic and ginger, the remaining 5 g of cornstarch, and 60 ml of water until you get a smooth, homogeneous sauce.

Chef's tip

The secret to truly crispy tofu is starch: the cornstarch coating firms up immediately in hot oil, creating a crunchy protective crust that retains its texture even after the sticky glaze is poured over it.

For wok dishes, preparation (mise en place) is key: measure out all ingredients and mix the glaze before turning on the wok, as the frying and thickening take only 7-8 minutes!
