Preparation method

Preparation and tokány base

1

Cut the pork shoulder into thin, even strips. Finely chop the onion, crush the garlic, slice the smoked sausage into rounds, and cut the pickled gherkins into thin matchsticks.

2

Melt the pork lard in a deep, heavy skillet or pot. Add the chopped onion and sauté over medium heat until translucent, then stir in the crushed garlic and sauté for another half minute.

3

Remove the pan from the heat, sprinkle in the sweet paprika, stir quickly, then add the sliced pork strips. Return to high heat and stir-fry the meat for 4-5 minutes until all sides turn pale and start to brown.

Chef's tip

The essence of a tokány lies in the sliced meat strips and the short, thick sauce. Do not add too much water during braising; the wine and the meat's own juices provide the most intense flavour!

If you want to make it even richer, you can bake the sheep curd dumplings in an ovenproof dish for 5-10 minutes to lightly brown them before topping with the hot tokány.
