Kifli Kukták

Autentikus görög stílusú, lassan sült sörös sertéscsülök (Kotsi choirino sti gastra me bira). A hús a fokhagymás-oregánós páctól és a sörtől omlósra puhul, bőre csodásan ropogósra pirul, a vele sült aranyló burgonya pedig magába szívja a zamatos fűszeres pecsenyelevet.

Preparation method

Preparation and marinating

1

Preheat the oven to 160 °C. Score the skin of the pork knuckle in a criss-cross pattern using a sharp knife, taking care not to cut deeply into the meat. Rub the knuckle thoroughly with salt and freshly ground black pepper.

2

In a bowl, mix together the extra virgin olive oil, Dijon mustard, honey, freshly squeezed lemon juice, crushed garlic, dried oregano, and finely chopped rosemary. Thoroughly coat the pork knuckle on all sides with this aromatic spice mixture.

Slow roasting and crisping

1

Place the seasoned pork knuckle into a deep baking pan or cast iron roasting dish (gastra), then pour the light beer around it. Cover tightly with aluminium foil or its lid, and roast in the preheated oven for 2 hours until the meat begins to become butter-soft.

Chef's tip

For perfectly crispy skin, pat excess moisture off the surface of the knuckle with paper towels before roasting, and rub salt thoroughly along the scoring lines.

If you want to make the Greek flavour profile even more authentic, you can also scatter a few lemon wedges and whole olives around the potatoes in the pan during the final stage of roasting.
