A Magyaróvári sertésszelet a magyar gasztronómia egyik legkedveltebb, tartalmas tepsis fogása: omlós sertéskarajszeletekre párolt fokhagymás-hagymás gomba és selymes sonkaszelet kerül, amit bőséges trappista sajttal sütünk aranybarnára a sütőben. Tökéletes, szaftos őszi egytálétel az egész családnak.

Preparation method

Preparation and searing the meat

1

Cut the pork loin into 4 equal, finger-thick slices. Gently pound them with a meat mallet, notch the edges in a few places so they do not curl during frying, and season both sides with salt and pepper.

2

Heat the lard in a frying pan. Sear the seasoned pork chops over high heat for 2 minutes on each side until they develop a nice crust. Remove the meat and place the slices side by side in a baking sheet or ovenproof baking dish.

Preparing the mushroom ragout

1

Finely chop the onion, and clean and slice the mushrooms. Add the butter to the fat left in the pan, then sauté the chopped onion until translucent.

Chef's tip

Slit the edges of the pork slices in 1-2 places along the connective tissue before searing so that they remain flat and tender while baking in the oven and do not curl up.

Fry the mushrooms over high heat until their moisture evaporates completely and they brown in the fat; do not let them simmer in liquid. This imparts a much richer flavor and aroma to the meat beneath the cheese.
