Kifli Kukták

Hagyományos alföldi paraszti fogás: puhára főzött, rusztikusan döngölt tarkabab fokhagymás babérlevéllel fűszerezve, amelyet serpenyőben pirított ropogós füstölt szalonna és aranybarnára karamellizált paprikás-hagymás zsír tesz ellenállhatatlanná. Friss kovászos kenyérrel tunkolva igazi lélekmelengető egytálétel.

Preparation method

Preparing and cooking the beans

0

Sort through the pinto beans, wash them thoroughly in cold water, then soak them in plenty of water for at least 6-8 hours or overnight. Drain the soaking water the next day.

1

Place the beans in a large pot and cover with fresh water by about 3-4 fingers deep. Add the bay leaves and 2 cloves of finely crushed garlic. Bring to a boil, then cover and cook over low heat for about 60-80 minutes, until the beans are completely tender and almost falling apart. At the end of the cooking time, season with fine salt and ground black pepper.

Mashing and thickening the beans

0

When the beans are butter-soft, remove the bay leaves from the pot. Ladle some of the cooking liquid (about 2-3 deciliters) into a separate bowl and set aside to adjust the consistency later.

Chef's tip

Traditional flavor booster: If you want truly smoky flavors, you can also cook a small piece of smoked ham rind or a smoked rib bone in the bean water, removing it from the pot before mashing.

Consistency tip: The beans will thicken further as they cool, so always keep the reserved cooking liquid! When reheating the next day, you can quickly restore the perfect velvety, rustic texture with a few spoonfuls of the bean liquid or hot water.
