Aranybarnára sült, ellenállhatatlanul ropogós rétestésztába tekert szaftos, fűszeres darált sertéshús. A balkáni húsos burek igazi klasszikus, amit hideg görög joghurttal tálalva a legfinomabb élvezni.

Preparation method

Preparing the meat filling

1

Finely chop the onion and garlic. Heat the sunflower oil in a pan, then sauté the onion until translucent, about 4-5 minutes.

2

Add the minced garlic and minced pork. Fry over high heat until browned, breaking it up with a wooden spoon. Season with salt, pepper, and sweet paprika, then cook over medium heat for 8-10 minutes until the juices thicken. Remove from the heat and allow to cool until lukewarm.

Assembly and baking

1

Melt the butter, then mix it with the sparkling water - this emulsion ensures the filo pastry turns out irresistibly crispy and airy. Preheat the oven to 190 °C (conventional top and bottom heat).

Chef's tip

Brushing with sparkling water and butter is the secret to authentic Balkan burek: the carbonation helps puff up the layers, leaving the pastry amazingly crispy on the outside, yet soft and juicy on the inside.

Instead of cold Greek yogurt, you can also serve it with traditional ayran or a fresh cucumber salad.
