A Chana Madra az észak-indiai Himácsal Prades vidékének egyik legfinomabb tradicionális étele: csicseriborsó selymes, fűszeres joghurtos mártásban lassú tűzön összefőzve, illatos basmati rizzsel és friss korianderrel tálalva.
Preparation method
Cook the basmati rice in double the amount of lightly salted water for about 12-15 minutes until tender, then let it rest covered.
Melt the butter in a heavy-bottomed pan or pot over medium heat, then add the finely grated fresh ginger and ground cumin. Fry for 1 minute until fragrant.
Add the ground turmeric and garam masala, stir into the spiced butter, then remove the pan from the heat for 1 minute to let the fat cool slightly.
Chef's tip
It is advisable to let the yogurt come to room temperature before cooking, and stir continuously over low heat at the beginning to keep the sauce perfectly silky and creamy.
If you like spicy flavours, you can also fry a pinch of chilli flakes or a finely chopped green chilli in the spiced butter alongside the ginger.
