Preparation and parboiling the vegetables
Preheat the oven to 190 °C (conventional top and bottom heat). Peel the potatoes, slice them into 3-4 mm thick rounds, parboil them in lightly salted boiling water for about 8-10 minutes until half-cooked, and drain thoroughly.
Separate the cauliflower into small florets, wash them, parboil in rolling salted water for 5-6 minutes until crisp-tender, and then drain.
Searing the meat
Lightly pound the pork loin slices and season both sides with salt and pepper.
Chef's tip
Do not overcook the cauliflower during parboiling; it should remain slightly crisp-tender, as it will soften further in the oven under the sauce.
For an even richer flavor, you can stir a little sour cream or heavy cream into the sauce along with the Trappist cheese.
