Preparation method
Cut the chicken breast fillet into thin strips or bite-sized cubes. In a small bowl, mix the cornstarch with 1 tablespoon of soy sauce and toss the chicken breast in it so that the starch coats it evenly (this guarantees a juicy result).
In another small bowl, prepare the wok sauce: mix together the remaining 2 tablespoons of soy sauce, the oyster sauce, the sesame oil, and 2 tablespoons of water.
Cut the broccoli into small florets and slice the stem thinly. Finely chop the garlic, grate the ginger, and slice the spring onions diagonally, separating the white and green parts.
Chef's tip
Do not steam the broccoli for too long; it is best when it stays bright green and pleasantly crisp after quick stir-frying.
If you like spicy flavours, you can also add a little sliced fresh chili pepper or chili flakes to the wok along with the ginger.
