Preparation method
Preparing the Stew Base and Celeriac
Peel the celeriac and cut it into even, approx. 1.5 cm cubes. Finely chop the onion and garlic, and dice the Hungarian wax pepper and tomatoes.
Heat the sunflower oil in a deep pot, add the finely chopped onion, and sauté over medium heat until golden.
Add the Hungarian wax pepper, tomato, and garlic. Sauté together for a few minutes until the vegetables release their juices and form a thick, aromatic base.
Chef's tip
Celeriac is a vegetable with a pleasantly sweet, nutty aroma that, when simmered slowly, wonderfully absorbs the rich spices of the Hungarian stew base.
Only mix the dumpling batter right before cooking so that the dumplings stay light and springy.
