Cut the turkey breast into larger, approx. 3x3 cm cubes, then pat the surface thoroughly dry with paper towels.
In a small bowl, mix together the brown sugar, smoked paprika, granulated garlic, salt, and ground black pepper. Sprinkle the spice mix over the meat cubes and toss well so that all sides are evenly coated.
Cooking and caramelizing
Preheat the grill or oven to 130-140 °C indirect heat (if grilling, use smoking wood for a rich aroma). Place the turkey cubes on the rack and cook for approx. 30-35 minutes until a nice red crust forms. In the meantime, mix the apple cider vinegar 1:1 with a little water and spray or drizzle it over the meat to keep it juicy.
Chef's tip
Turkey breast can dry out faster than pork or beef, so braising under aluminum foil with butter is key to achieving a melt-in-your-mouth, juicy texture.
If cooking in an oven, use conventional top-and-bottom heat instead of convection, finishing with the grill function at the end so the glaze browns beautifully.
