A Goong Ob Woonsen a thaiföldi utcai ételek és tengeri fogások igazi klasszikusa: vékony üvegtészta, amely a serpenyőben párolódva magába szívja a friss gyömbér, a roppantott fekete bors, a fokhagyma, valamint a szója- és osztrigaszósz intenzív, gazdag aromáit. A szaftos, zsenge garnélarákok közvetlenül a tészta tetején, gőzben puhulnak tökéletesre. Könnyű, mégis tartalmas ázsiai főétel, amely mindössze 25 perc alatt elkészül egyetlen serpenyőben.

Soak the glass noodles in lukewarm water for 8-10 minutes until softened, then drain and cut into 2-3 parts using kitchen scissors to make them easier to toss.

Rinse the shrimp, cleaning and deveining them if necessary. Thinly slice the ginger, crush the garlic cloves with the flat of a knife, and coarsely crush the whole black peppercorns in a mortar.

In a small bowl, mix the sauce: combine the soy sauce, oyster sauce, sesame oil, and about 100 ml of water or vegetable broth, then toss in the drained glass noodles so they absorb the flavors.

Chef's tip

For an even more authentic flavor, you can place a few thin strips of streaky bacon or Mangalica lard at the bottom of the pan before frying the spices, just as it is prepared in Bangkok for the traditional clay pot version.

Be careful not to overcook the shrimp: as soon as they turn a nice pink and are cooked through (6-8 minutes), turn off the heat so the shrimp remain silky and tender.
