Clean the leftover vegetables or whatever you find in the pantry (e.g., carrots, celery root, potatoes) and cut them into uniform, approx. 1.5-2 cm cubes. Clean the button mushrooms, then cut them into wedges or thick slices.
Finely chop the onion, and crush or mince the garlic cloves. Finely dice the Hungarian wax pepper and fresh tomato for the traditional stew base.
Cooking and making the gravy
Heat 3 tablespoons of sunflower oil in a deep pot, add the finely chopped onion, and sauté over medium heat for about 5 minutes until translucent and golden.
Chef's tip
Feel free to use any root vegetables, squash, kohlrabi, or cooked soup vegetables left in the fridge for this recipe - add the latter only in the last 5 minutes of cooking so they do not fall apart.
If you prefer a richer, thicker gravy, you can finely grate a small potato into the stew, which naturally gives the dish a perfect creaminess.
