Wash and drain the shrimp. Finely chop the shallots and garlic. Slice the spring onions, separating the white and green parts. Cook the jasmine rice in double the amount of lightly salted water until tender, then keep warm covered. Thinly slice the cucumber.
Caramelizing and cooking
In a heavy-bottomed pan, heat 2 tablespoons of sunflower oil with the cane sugar over medium heat. Stir constantly until the sugar melts and turns a nice amber caramel colour (approx. 2-3 minutes).
Add the finely chopped shallots, garlic, and the white part of the spring onions. Sauté quickly for 30-40 seconds until fragrant.
Chef's tip
The key to caramelizing is patience: make sure the sugar does not get too dark, as it can turn bitter. As soon as it reaches a nice golden brown caramel colour, add the onions immediately!
Coconut water adds natural sweetness and a silky texture to the reduced sauce, perfectly balancing the salty fish sauce and the pungency of the pepper.
