Preparation and boiling the potatoes
Wash the potatoes thoroughly, then boil them in their skins in lightly salted water for about 20-25 minutes until half-soft. Drain, let them cool slightly, then peel and slice into half-centimetre thick rounds.
Finely chop the onion and crush the garlic cloves.
Preparing the juicy minced meat ragout
Heat one tablespoon of lard in a large pan. Add the finely chopped onion and sauté over medium heat until translucent.
Chef's tip
If you would like an even silkier topping, you can mix a little whipping cream into the sour cream mixture.
It is worth boiling the potatoes the evening before, as once cold, they are much easier to slice neatly into even rounds.
