Cook the rice in twice its volume of lightly salted water until half-tender, then drain and set aside. Rinse the canned white beans and drain thoroughly.
Finely chop the onions and crush the garlic. Slice the cured sausage into thin rounds.
Preparing the meat ragout
Heat the lard in a deep pan, add the chopped onions, and saute until translucent. Add the crushed garlic, then the minced pork.
Chef's tip
If you want an even juicier result, you can mix a little paprika powder or a tablespoon of lecso into the sour cream.
Best served with sourdough pickles or pickled apple peppers!
