Cut the cod fillet into bite-sized pieces of about 3-4 cm. Peel the shallots, garlic, and ginger, then grate or finely chop them.

In a bowl, mix the fish pieces with 1 teaspoon (5 g) of turmeric, 1 tablespoon (15 ml) of fish sauce, 1 tablespoon of vegetable oil, a pinch of salt, and the grated garlic-ginger aromatics. Leave to marinate at room temperature for 20-30 minutes.

Scald or cook 200 g of rice noodles according to the package instructions, then drain and rinse with cold water so they do not stick together.

Chef's tip

Traditionally in Vietnam, this dish is prepared and served at the table in a sizzling hot pan. At home, it is also best served piping hot straight from the stove.

If you would like to make it even richer, you can also add a little fermented rice or shrimp paste to the marinade, but for the authentic experience, fresh dill and turmeric are the most important ingredients.
