A Merluza a la Gallega Északnyugat-Spanyolország, Galícia egyik legkedveltebb hagyományos halétele. A puha, selymes tőkehalfilét lágyan főzzük burgonyával, hagymával és babérlevéllel, majd a jellegzetes, aranyszínűre pirított fokhagymás-füstölt paprikás ajada olajjal locsoljuk meg. Könnyű, rendkívül ízletes és 30 perc alatt elkészíthető mediterrán klasszikus.

Preparation and cooking the potatoes

Peel the potatoes and cut them into slices about half a centimeter thick. Peel the onion and slice it into thicker half-moons.

In a wide, shallow pot or skillet, bring enough water to a boil to just cover the vegetables. Add 1 tsp salt, 2 bay leaves, the potato slices, and onion slices. Cook over medium heat for about 10–12 minutes until the potatoes are half tender.

Steaming the fish

Cut the 400 g cod fillet into 2–4 larger portions, pat dry with paper towels, and lightly salt them. Gently place the fish pieces on top of the bed of potatoes and onions cooking in the pot.

Chef's tip

The secret lies in the temperature of the ajada oil: always stir the paprika into the oil after taking it off the heat and letting it cool slightly, because the paprika can turn bitter in oil that is too hot.

When serving, you can also offer fresh, crusty baguette or sourdough bread to dip into the rich, flavorful garlic oil.
